A Healthier Starbucks Pink Drink Recipe in an Ice Pop

It’s Friday and I have a fun recipe to share with y’all today that is perfect for the Spring and Summer!

When I became pregnant, coffee was the only thing that made me nauseous (not anymore thank goodness), so I had to find a new drink of choice. That’s when I discovered the pink drink at Starbucks! I had had the strawberry acai refresher quite a bit and loved it. But I was blown away when I saw them make it with the coconut milk instead of water, total game changer! 

Needless to say, I had to try it and it didn’t disappoint!  But at a whopping $5 a drink I just wouldn’t let myself buy it that much. Besides that it was a little too sweet for my likings, other than for a treat here and there. 

With all of the Starbucks in our area closed due to Corona, I took it into my own hands to create something that was similar to the pink drink but much healthier. Plus, to add a little twist to it and have a little bit of fun I decided to get some use out of some ice pop molds that had been collecting dust in our cabinet.

A Healthier Starbucks Pink Drink Recipe

Ingredients:

  • 5 Cups Ocean Spray White Cran Strawberry Juice
  • 3 Cups Unsweetened Coconut Milk, I used the SO Delicious Brand
  • 18 – Ice Pop Molds (this is how many I had but depending on what you are using you may have to adjust ingredient amounts)
  • Fruit of Choice – Strawberries, Raspberries, etc. (Both Frozen and Fresh Work)
*The juice and coconut milk ratio can be altered to your personal preference. I personally make them with a 1:1 ratio which isn’t as sweet but add in more fruit to make them naturally sweeter. But if you want it to mimic the pink drink I would use the ratio above. I recommend tasting the mixture and making sure it is to your liking before pouring it into the molds and adjusting as needed. Keep in mind that once they are frozen the sweetness is diluted a little bit!

These ingredients can also be used to make the drink if you don’t have any ice pops to use! I’ve linked the products that I used below. I also included some freeze dried strawberries which are great to use in the drink, just like Starbucks does!

A Healthier Starbucks Pink Drink Recipe in an Ice Pop

Directions:

  1. Using a pitcher or a measuring cup, mix together the juice and coconut milk.

  2. Open all of the ice pops and place the desired amount of fruit in each.

  3. Fill each mold to the top, leaving enough room to be able to zip them closed without overflowing.

  4. Turn each of the ice pops upside down until you get the fruit to spread out evenly in the tube.

  5. Rinse and dry the ice pops off before placing them flat in the freezer.

  6. Freeze for 4-6 hours, or until completely solid.

  7. Enjoy!

As kids, my friends and I LIVED off of otterpops in the summer and these definitely bring me back to my childhood! They are always so fun and are the perfect treat for you or your kiddos. Not to mention you can even make an adult version of these 😉 Now were talkin! lol
